Ghee Rice with whatever you can find in the fridge (Vegetarian)

Well, a girl has got to innovate when things get boring. It was yet another vegetarian day, and I had to cook up something interesting for the family. I pondered through the whole night, and got this excellent idea.Simple dish, and it is all up to your creativity and your mood. Suit yourself with whatever you have.....Make it yours!!
I did mine like this...


Ghee Rice with whatever you can find in the fridge
Ingredients:
Rice
Ghee
Finely sliced red chillies
Grated Carrots
Finely sliced capsicums
Cinnamon stick and clove
Freshly grounded garlic + ginger
Garnish
Fresh coriander leaves
Green chilles
Tomato

Heat up a little ghee, and fry the garlic-ginger paste, cinnamon and cloves until fragrant. Then add in rice and stir. Make sure rice is coated with ghee all over. Then out into your cooker, as how you normally do...
When it is cooked, but not fully cooked...heat up a little ghee, and slightly fry the rest of the veges..Then add them into the half-cooked rice, and continue cooking. You can add "daun pandan" if you want to. I did not have any on that day, so I did not. Once rice is cooked, throw in the garnishing ingridients, and stir  through.

Voila! An appetizing, vegetarian rice dish for the day !

It should be complimented with a spicy sambal kind of dish, or a simple raita...but I am to tired to talk about those two now!! Enjoy the results...I mean photos, to you...
