Exotic yet simple dinner : Thai basil Chicken with steam rice

There some types of food that forces you to eat, even though you are not hungry. And this is the kind of food- Thai Basil Chicken, not your everyday food, exotic and nevertheless tantalizes your taste buds. The key player here is the Thai basil. It has a more assertive taste than many other sweet basils. The herb has small leaves, purple stems and a subtle licorice or mint flavor. Thai basil, which has an anise flavour, is used as a condiment in Thai and Vietnamese dishes.

I was just shopping around in Tesco, and to my luck, I found it, so I decided to make this recipe for the very first time. I would like to share this simple recipe with you.



Thai Basil Chicken Small pieces of boneless chicken. ( about 600gm)
2 garlic cloves, finely chopped
4 shallots, thinly sliced
 Fish sauce, adjust according to taste
1 tablespoon palm sugar, shaved
4-5 birds eye chillies, seeds removed and thinly sliced
1 tablespoon of oyster sause
1 tablespoon thick black soy sauce ( slighty sweet type)
a bunch of thai basil leaves
Some coriander leaves for garnish
Salt and oil

1. Heat oil in wok over high heat
2. Add garlic, shallots and chillies and stir fry until fragrant and colour turns light brown
3. Add chicken, dark soy sauce, fish sauce and palm sugar. Cook chicken until chicken is cooked through and sauce is reduced by half
4. Stir through with thai basil for 10 seconds and turn off heat
5. Serve on top of steamed rice, add extra chillies and thai basil if desired

So that is my dinner, below. Thai Basil Chicken, Steam rice and the condiment, Sambal Belacan Mangga.(mango)
  The Sambal Belacan Mangga was an interesting invention. We had bought some mangoes, and they turned out to be so sour. We could not eat them, so I decided to make something out of them. It is a very simple recipe, just how you make "sambal belacan", but just add the mangoes and pound them up. Voila, it's as simple as that. I am not going to go into details of making "sambal belacan", as the star of this blog is the Thai Basil Chicken. some other perhaps... but I can share a humble, close up a photo.
