Delicious Fried Rice for Supper...Anyone?

It was 11.00pm, and I was feeling hungry. This is definitely not a healthy supper option, but it was late and I had to make do with what I have.
Frankly, anyone can fry a decent fried rice because it is basically dumping whatever you have and mix the rice  in the wok action. Just don’t overdo the rice by adding too many fancy stuffs which tastes clash.

I had some leftover rice in the cooker, and I started by ransacking the fridge. The button mushroom that I bought from TESCO caught my eye, and so did the sweet-pea. Open the freezer, and there were some prawns. I had some basil leaves hidden somewhere, and some black fungus. All the interesting ingredients, and not what you normally use for fried rice.

Heat the wok, throw in the onions, mushroom, black fungus and prawns. Add a little fish sauce, oyster sauce and my already made sambal belacan. Add in the rice and basil leaves. Stir. Break in an egg. Stir, stir, stir, and add in the sweet pea. I looked around and saw some left over fried ikan bilis from dinner.

Garnish with the ikan bilis and spring onions. Serve will sambal belacan- yum yum. Not bad, huh, for something I cooked up at 11pm.

Before I begin, I know some of you out there will say that this isn’t genuine, authentic spaghetti bolognese (or bolognaise if you’re French). That’s why, notice the deliberate spelling error...in the title.
 





What you would need :
  • Pasta (spaghetti)
  • Tomato Paste
  • Any type of meat (I did not have any in the fridge, so I took out a burger patty)
  • 1 Garlic
  • whatever herb you have in the fridge - I had basil and I used it.
  • Olive Oil
  • Salt
  • Parmesan Cheese
  • One luxury item- A packet of cream
  • Soak your spaghetti in a bowl of water for around 10 minutes. By soaking it first, you shorten the  cooking time.
  • Mince your meat patty. Add some seasoning if you wish to.
  • Put the spaghetti soaking water into a pot and bring to a boil. Add salt.Remember to cover the pot, and you can reduce the heat once it starts to boil.
  • Heat up your olive oil in a pan and start frying your garlic and mince meat, and make sure it gets cooked.
  • Add your tomato paste 
  • When sauce starts to simmer, add the cream, then stir to make a consistent sauce.
  • Season accordingly.

Most people do not add cream, but I feel that it gives the dish, a luxurious texture and feel, not to mention taste. The use of the basil also adds a punch to the dish, with its tangy taste. Since the dinner was for my son, I try to minimize the veges, only because he hates them, and will definitely pick them out. I know, I know, I am not being a good mom...

While serving , top up with parsley or coriander, and grated cheese. Simply delicious and does not take too much time.

Milo Jelly- Something I thought off, in a split of a second...

I was thinking of making my 2 layer jelly, right up until I put my agar-agar to boil. Then I decided to switch to a new invention(it may not be new to some, but honestly I have not seen this recipe anyone-though it might already exist).

So, I took some milo, mixed it with condensed milk, fresh milk and sugar, and once the agar-agar had fully dissolved, added to the mixture.
Pour it into a baking dish, and went to my fridge, got some chocolate wafer out. Crushed the wafers and sprinkle them only the top of the jelly. That is all to it actually-enjoy! But make sure you eat them chilled-just like drinking milo ais (iced milo), except that you are eating them- Ha ha...

Universal Studios, Singapore

Universal Studios is located at Sentosa, small island located at the south of Singapore. It does not take long to drive from JB to Sentosa.The park is divided into different section according to a theme or a movie related theme.

The journey starts from from Hollywood! You will walk through the retail shops and restaurants along the side, and will bump into famous characters like Betty Boop, Charlie Chaplin, Frankenstein and others  in costumes. You are allowed to take photos with them with your own cameras. There will also be the staff of the park to take photos for you and you may choose to purchase the photos are “The Darkroom” photo shop.

After exiting from the Hollywood theme, there will be a very small theme about Sci-fi. It is, however, the biggest and only (I think) roller-coaster ride in the park. Unfortunately, the roller-coaster ride was under maintenance on that day. 

Leaving the Sci-if theme will come into the Egypt theme. This theme centered on the movie “The Mummy”. It was the theme that captivated us the most, and we took the opportunity to snap as many photos as possible.The sculptures in this theme are beautiful. The craving of the walls and stones are very detailed. There is also a small part of the park for Water World theme.There is a indoor roller-coaster ride which my dad and sister tried. I am not a fan of these kind of thrill rides, so I volunteered to babysit the kids, instead. The verdict was, the ride was very much fun, for those who like the adrenalin rush. It seems it is a ride into a pyramid...that is all I know.


The next stop is  the Lost World. This theme centered on the movie “Jurassic Park”.  Outside of the food court is two huge dinosaurs. There are some fun rides in this theme. One of which is the water ride that  people can get soaked in without their knowledge. They came out of the ride all wet! The Lost Worl is definitely an interesting place for school going children...

Leaving the Lost World you will come to a Far Far Away theme. And this theme is centered on the movie Shrek. There is a 4D Shrek attraction in here. The castle was so huge and awesome! The 4D Shrek Movie is definitely a must see.

Then the final theme you will walk into to complete your round around the park will be the cutest Madagascar theme. We was there just on time to watch the show. The children (and the adults) simply loved this them the best.


We also watched a few shows, like the Monster Rock, Spielberg's special effects and the Fireworks Display at night. That will conclude my tour in Universal Studios Singapore! Singapore’s very first casino is located just next to Universal Studios, but we did not go there.

Simple Raita

Raita, a cheap and delicious dish is very common in India & Pakistan. It is a yogurt based, salty cooling side dish . There are many ways to prepare the dish. It gives tremendous taste when served chilled and any leftovers refrigerated. You can drop any item into the yogurt to make raita.

Mine was made of coriander leaves, tomatoes, mint leaves, green and red chillies and onion are chopped fine. Mix them into the yogurt.  Raita is mostly served salty. I wanted mine a little sweet,so I added sugar in it.I kept it in the fridge to chill.
Can be eaten with briyani rice, pulav, kebabs or even snacks such as pakhoras, vadai and so on. It is all up to your imagination....

Chettinad Kozhi Rasam (Chettinad Chicken Rasam)

Rasam, though spicy is an excellent home remedy for common cold.  It's very spicy and hot and most often, the cold says 'Bye-bye' the very next day.

By way of making the chicken rasam, is definitely a one of a kind. To be honest, I made chicken soup the day before, and I had lots of left over. So, I decided to innovate and create it to another dish. I looked through teh net to get the ingredients and tried out my own way. Mind you, this is not the classic method of making this dish.



Ingredients:
Left over soup (hahaha)
To grind ( 1 tablespoon of black pepper, 1 tablespoon of cumin, 1/2 tablespoon of fennel seed, 1 tablespoon of coriander, 3 cloves of garlic and 2 pcs of dried chillies) - dry grind
To fry - curry leaves, onion
Tomato
I tablespoon of tuneric and 1 tablespoon of chilly powder


Serve these piping hot, with steamed rice. Yep, pour the rasam over hot, hot rice and enjoy it with the varuval. No fun eating it cold. Everything has to be piping hot! You'll work out a sweat! The menu for the day was Chicken Rasam, Chicken Kicap(in Soya Sauce) and Brocolli & Mushroom.

Milo Cubes- Super Easy Dessert

This is one of the easiest recipes that I have come across, and thank to my sister. All you need is butter, milo, marie biscuits and condense milk. Remember, break those marie biscuit into chunk size pieces. not powdered form. Don't ask me how much, plse...

Heat butter, and stir in rest of the ingredients, and that is all to it. Put it into a pie dish and let it cool down. Once it is cooled down, put it into the refrigerator. Just remember while it is still hot. cut them into cubes, so that when it sets, you just bring out each cube.

Sad to say, it is not a pretty sight, and will not look appetizing at all, with it dark colour and my mediocre presentation...but damn, it is good to eat!!

Eaten right from the fridge, just heavenly. and guess what, it never last more that a day. No...it does not spoil, it just vanished from the fridge !! Not only son, hubby too, is the culprit!
