Home Made Chicken Rice, healthy and delicious

My boy just loves chicken rice. Take him to any Chinese hawker stall, and he will choose chicken rice as his meal. As we know, hawkers do not really emphasize on good hygiene, and is neither are health conscious. So I thought, why not cook up something on my own. You get a not only delicious, but healthy meal in a jiffy...

My humble recipe listed as below :


Soup: Drop in some chicken bones, with a couples of cloves of garlic, and little ginger, into water. Season it with salt and leave it to boil. Boil it however long you like, until you feel there is enough flavour. Be prepared for a long simmer.

Rice: Once soup is flavourful enough, we use the water as the base to cook the rice. Before that, you have to fry the grains with some butter, and garlic + ginger paste. Then put in the chicken stock, and how we normally put in water and cook the rice.Frying them with butter and paste enhance the aroma and flavour..

Chilli dip: This is so easy to make. Red chillies, a little bit of ginger and garlic, and blend them up. Add seasoning to taste, which are salt, sugar (if needed) and a little vinegar...and voila !

And now for the roasted chicken ( I like to roast my chicken, because it is healthier): Marinate the chicken(I prefer to cut them into pieces) with garlic-ginger paste, soya sauce, dark soya sauce, oyster sauce,  chilli powder and salt to taste (be careful with it). I sometimes add the "kicap lemak manis", a kind of dark soya sauce, which is slightly sweet. Set the chicken aside for a minimum of half an hour. Add in butter (or olive oil , if you are health conscious), because you have got to add a fair bit of butter. Roast the chicken pieces in the oven. Once chicken pieces are ready, place them onto a bed of sliced cucumber. Pour in the dressing that is left over in your roasting pan, and garnish it with a significant amount of coriander leaves and spring onions.

There you go, you have one healthy, yummy and affordable lunch/dinner for the whole family.
